Velvety, elegant and fragrant

The excellent balance between freshness, jammy and floral notes stands out, making it always pleasant.

 

GRAPE VARIETY

Barbera grown in Guyot with sustainable viticulture. A generous vine with great vigor, thanks to its rusticity and the decisive leafing and thinning operations for the production of small and valuable bunches, it has allowed the obtaining of  an excellent wine.

HARVEST

It falls in the first days of October with manual sorting, usually delayed for the purpose of complete ripening of the fruit, reduction of the acid component and general increase in quality.

​

WINEMAKING

The grapes are delicately destemmed with light pressing and subsequent cold static maceration on the skins for 1 day to promote the natural enzymatic processes.

Alcoholic fermentation at 24° C for 15-20 days with frequent punching down to favor the production of the rich aromatic complement and a good extraction of the anthocyanins which give the intense color of this wine.

REFINEMENT

In worn oak barrels for 4 - 6 months to maintain the freshest and most delicate aromas, of which the first month on the yeasts acquiring volume, fatness and the characteristic notes of red fruits and flowers, velvety and fragrant. 

Bottle maturation for six months during which the wine softens, the floral and fruity notes grow, broadening and the more complex ones of spices, lacquer and chocolate appear.

SERVICE ADVICE

Temperature:  16-18°C  and consume it in 10 years.

​

COMBINATIONS

A wine with an immediate pleasantness, it is also suitable for pairing with dishes rich in sauces or more fatty:  appetizers, first courses and savory pies, second courses of different types of white or red meat, beef, sheep or pork, and fresh to medium-aged cheeses.

​

TASTING NOTES

- colour: intense ruby red and very intense violet reflections

- aroma: hints of fruitiness, in young wines, and of austerity, for the more advanced ones with notes of plum, blackberry and jam; intense floral and spicy bouquet. It stands out for the pleasantness of its aromas and its harmonious completeness.

- taste: full, fresh and fragrant with references to the intense notes of flowers and red fruits with a silky and persistent sensation of sweet softness.
