Savory, fragrant and deep
The complexity of the Langa soil meets the varietal elegance of Pinot Noir enhanced by the vinification with delicate color extraction that characterizes rosés and a deep structure that allows the olfactory imprint of this variety to be best expressed. Complex, elegant with notes of small red fruits that fade into bread crust, white flowers and fruits and fresh hay.

HARVEST
It is anticipated by careful leaf removal and thinning for the production of small bunches qualitatively very fine and requiring particular attention in the last stages of maturation, which is essential for obtaining a not very deep color and good acidity.
WINEMAKING
The whole grapes, loaded manually into the press in an inert environment (nitrogen), rest for a short maceration of 4 hours aimed at favoring the slight extraction of the typical Rosé color into the must, after which the soft pressing and flotation for the natural clarification of the must. Start of the slow alcoholic fermentation which lasts about 1 month at 14°C and ends with the permanence on thin lees for 2 months during which the wine acquires fatness and volume.
DRAFT
The second fermentation is carried out with a very slow refermentation in the bottle characteristic of the Classic Method in the spring of the year following the harvest, usually on a crescent moon. During maturation in the bottle for over 48 months, the lees are brought into suspension at least twice with the traditional rapid shaking with a flick of the wrist (Coupé de Poignet). Once this period is over, we proceed to the tip for final disgorgement.
ZERO DISGORGING AND DOSAGE
The refined completeness that Pinot Noir expresses after long periods on the yeasts of the classic method reaches its peak when it is pure. To respect these prerogatives we exclusively produce our Alta Langa from Pinot Noir grapes as a Zero Dosage Reserve.
COMBINATIONS
Excellent as an aperitif; Perfect with ham and salmon dishes. In general it prefers pairing with shellfish, shellfish and all seafood cuisine. Also very interesting alongside structured appetizers, tasty first courses and soups, white meats and cheeses. Also pleasant with pastries. To drink at 4 - 6 °C in 10-15 years.
TASTING NOTES
- colour: Bright rosé with onion skin nuances. Fine and very long perlage.
- smell: Elegant, broad and crunchy with inviting hints of strawberry and blueberry, lime blossom and currants that combine with notes of citrus fruits and bread crust, mixed with hints of fresh hay and undergrowth.
- taste: Complex, deep and balanced. Evident olfactory references of fruit and white flowers blend with the fresh and pleasant structure. Long and explosive finish with savory mineral notes.
