Elegance, complexity and balance
Gentian, rhubarb and liquorice characterize the bouquet of this wine thanks to the particular composition of the soil, the excellent exposure and the high planting density of this vineyard.

HARVEST
falls in the first days of October with manual sorting. The excellent exposure, the high planting density of 5000 plants/ha and the particular composition of the soil guarantee optimal maturation of the small, very valuable bunches obtained thanks to the laborious summer leafing and thinning operations.
WINEMAKING
Delicate destemming with light pressing and static cold maceration for 1 day.
Alcoholic fermentation at 24° C for 20 days with frequent punching down. Subsequent splinting of the cap for a further maceration of a month when the softer and more defined notes appear.

REFINEMENT
In medium-sized oak barrels for 2 years, of which 2 months on the lees, a period during which it acquires volume and the floral, fruity and spicy sensations grow and expand.
Bottle maturation for 1 year in which the tannins soften, the more complex balsamic and ethereal notes of rhubarb, liquorice and goudron appear.

Temperature: 16-18°C. To drink in 15-20 years.

COMBINATIONS
A wine that excites with its refinement, suitable for multiple combinations ranging from appetizers to savory pies, from first courses to more structured ones such as second courses of red meats and medium and long matured cheeses.

TASTING NOTES
- colour: intense and brilliant ruby red
- aroma: broad bouquet with notes of cherries in alcohol and small fruits, dog rose and gentian with hints of star anise and liquorice, rhubarb and chocolate. On the finish, nuances of undergrowth and Goudron.
- taste: fresh and harmonious with notes of black berry jam and cooked plum. Elegant silky tannins with evident sensations of liquorice and references to menthol and medicinal herbs. Chocolate powder and goudron in the finish.
