HARVEST
Late with manual sorting, it is carried out in the last part of October, to allow a slight over-ripening of the small, highly prized bunches responsible for the elegance and complexity of the Barolo Rocchettevino.
WINEMAKING
Delicate destemming with light pressing and static cold maceration for 1 day.
Alcoholic fermentation at 26° C for 20 days with frequent punching down. Subsequent splinting of the cap for a further maceration of a month during which, thanks to the important natural lysis of the yeasts, the floral and fruity notes are defined and the wine acquires volume and depth.
REFINEMENT
In oak wood for approximately two and a half years, of which the first 18 months in second and third passage barrels and the following year in medium-small sized Slavonian barrels. This is followed by one year's maturation in the bottle during which the important floral bouquet that characterizes Barolo Rocchettevino blends with notes of jam and spices; the more complex scents of liquorice, leather and tar appear.
COMBINATIONS
The great elegance and freshness of the olfactory composition makes it suitable for multiple combinations: appetizers, savory pies and first courses with ragù, second courses of structured red or white meats such as duck and guinea fowl, medium and long matured cheeses.

TASTING NOTES
- colour: bright ruby red.
- aroma: large and complex floral bouquet: notes of jam, cherry in syrup and small fruits, well blended with the raspberry in evidence; the nuances of pink and the delicate hints of violet are suggestive, combined with those of liquorice and chocolate. Balsamic tones follow reminiscent of resin and medicinal herbs. On the finish, especially for the more refined wines, sensations of liquorice and Goudron with nuances of undergrowth, tobacco and leather.
- taste: excites with its softness and flavor complexity; sweet notes of black berry jam and powdered chocolate prevail. Soft and well-balanced tannins with pleasant acidity and good alcohol content. For the more refined vintages, evident sensations of liquorice, tobacco and tar in the finish.

VINEYARD FEATURES
Area of origin: Rocchettevino - La Morra. Ronchetovinum*, historic toponym already reported in the municipal land register of 1477; it dominates the entire panorama of the Langhe. The very sunny exposure and the high temperature changes guarantee a generous Barolo, well structured and with extraordinary elegance in its aromas and richness of taste.
