HARVEST
The manual sorting harvest takes place in mid-October, to allow optimal maturation of the polyphenols and fruit responsible for the elegance and expressiveness of Barolo Sorano. It is preceded by laborious manual peeling and thinning operations carried out during the summer months.
WINEMAKING
We adopt a rigorous winemaking style, respectful of tradition and capable of transferring the unique "terroir" that this sub-area can express from the grapes to the wine.
Delicate destemming with light pressing and static cold maceration for 1 day.
Alcoholic fermentation at 26° C for 20 days with frequent punching down with subsequent splinting of the cap for a further maceration of a month to favor the production of the rich aromatic complement and the extraction of the noblest polyphenols.
REFINEMENT
Barolo Sorano matures in Slavonian oak barrels for 30 months. During this period, thanks to the important natural lysis of the yeasts maintained for the first two months, the wine acquires volume and the floral, fruity and spicy sensations grow and expand. This is followed by 12 months of bottle refinement during which the tannins soften and the spicier and more ethereal sensations that characterize it appear. The balsamic notes of eucalyptus and medicinal herbs blend with the more complex ones of lacquer and resin.
COMBINATIONS
Its generous structure and rich taste find the best combination alongside second courses of red meats and game, medium and long-aged cheeses. Also excellent at the end of a meal accompanied by bitter chocolate.

TASTING NOTES
- colour: intense and brilliant ruby red with more mature garnet shades.
- aroma: intense and enveloping with evident notes of cherry in alcohol and dog rose, plum jam and small fruits including ripe blackberry. Followed by persuasive hints of liquorice and bitter chocolate, resin and rhubarb; in the more refined wines the typical ones of tar, tobacco and leather are clearly distinguished.
- taste: Full, powerful and complex; notes of black berry fruit and balms stand out, followed by a vein of liquorice that blends well. With aging the bouquet is enriched with complex notes of cinchona, fir resin and tar.
