Extraordinary wine in everyday life for the excellent balance between the intense fruity and floral notes, the right tannicity and those characteristics of Amaretto and Viola.

GRAPE VARIETY

Dolcetto grown in Guyot with sustainable viticulture; delicate variety, which requires particular attention in the vineyard and during winemaking.

A companion to daily dining, it has been cultivated in the Langa since time immemorial because in its simplicity it is an extraordinary wine, capable like few others of hiding in its nuances the limitations and merits of the hand that produced it.

HARVEST

By hand in the first half of September.

WINEMAKING

Delicate destemming with light pressing and static cold maceration for 1 day.

Alcoholic fermentation at 24° C for approximately 20 days with frequent punching down to favor the intense fruity notes and  a good extraction of the anthocyanins responsible for the rich color of this wine.

REFINEMENT

Maturation in barrel until April, of which the first 20 days on the yeasts, acquiring volume, fatness and the characteristic fragrant note. Subsequent refinement in the bottle for 3 months during which the balance between fruity and floral notes, the right tannins and the characteristics of Amaretto and Viola is optimised.

SERVICE ADVICE

Temperature:  16-18°C  and consume it preferably in  4 years.

COMBINATIONS

A wine with a simple character and immediate pleasure, it is excellent as an aperitif or paired with appetizers, first courses, savory pies and fresh or medium-aged cheeses.

TASTING NOTES

- colour: intense ruby red, with very marked violet and blackberry reflections.

- smell: vinous, fragrant, striking for its intense floral note, with inviting hints of ripe fruit among which cherry and plum stand out, followed by the characteristics of amaretto and violet. Light herbaceous note on the finish.

- taste: young, fresh with olfactory hints and a persistent velvet sensation. Pleasant almond aftertaste and slightly bitter on the finish.
