Complexity, volume and softness

The varietal elegance of Nebbiolo in this wine fully expresses the identity of a unique territory: the Langhe.

 

 

HARVEST

Preceded by summer thinning, it falls towards the beginning of October, usually early due to the advanced age of the vineyard and the particular basin shape which allows it to capture the heat and retain it during the night so as to achieve optimal maturation of the polyphenols responsible for the varietal elegance of Nebbiolo.

WINEMAKING

Delicate destemming with light pressing and static cold maceration for 1 day.

Alcoholic fermentation at 24° C for 20 days with frequent punching down. Subsequent splinting of the cap for a further maceration of a month during which the sweetest and most complex notes appear.

​

REFINEMENT

It matures in medium-sized Slavonian oak barrels for about two years, of which about 2 months on the lees, acquiring volume and broadening the floral and spicy notes.

Aged in the bottle for 1 year in which the sweetest sensations of powder, the most complex balsamic and ethereal notes of eucalyptus, medicinal herbs and star anise appear.

SERVICE ADVICE

Temperature:  16-18°C. It amazes with its refinement and complexity; consumption in 10-15 years.

​

COMBINATIONS

Its elegance and softness makes it a wine suitable for many combinations: appetizers, savory pies and first courses but above all with red meats and game, medium-long matured cheeses.

​

TASTING NOTES

- colour: intense and brilliant ruby red

- perfume: large and complex bouquet with notes of cherry in syrup and ripe blackberries, dog rose and violet, star anise and balsamic notes reminiscent of eucalyptus, resin and medicinal herbs. The sensations of liquorice, powder with nuances of undergrowth, leather and tar on the finish are pleasant for the more refined wines.

- taste: full, velvety and harmonious, striking for its tasting complexity; spices and sweet fruit notes,  black berry and cooked plum jam. Soft but well-present tannins with evident sensations of liquorice, tobacco and tar in the finish.

Soil: laminated Sant'Agata marl, Diano d'Alba sandstone mixed with sandy Sant'Agata marl

Grape variety: Nebbiolo grown in Guyot with sustainable viticulture.
