Austere, complex and ethereal

It is striking for the grandeur of the elegant spicy scents that combine with the sweet tones of red fruit jam with the most complex balsamic and ethereal tones.

  • Grape variety

    Nebbiolo grown in Guyot with sustainable viticulture.

  • Harvest

    The harvest with manual selection falls in mid-October, to allow optimal ripening of the polyphenols and the fruit responsible for the elegance and expressiveness of Barolo Sorano. It is preceded by laborious manual leaf removal and thinning operations carried out during the summer months.

  • Winemaking

    We adopt a rigorous winemaking style, respectful of tradition and capable of transferring from the grape to the wine the – unique - "terroir" that this sub-area can express.

    Delicate destemming with light crushing and cold static maceration for 1 day.

    Alcoholic fermentation at 26° C for 20 days with frequent punching down with subsequent splinting of the cap for a further maceration of a month to promote the production of the rich aromatic set and the extraction of the noblest polyphenols.

  • Pairings

    Its generous structure and richness of taste finds the finest combination alongside second courses of red meats and game, medium and long-aged cheeses. Also excellent at the end of a meal accompanied by bitter chocolate.

  • Ageing

    Barolo Sorano matures in Slavonian oak barrels for 30 months. During this period, thanks to the important natural lysis of the yeasts maintained for the first two months, the wine acquires volume and the floral, fruity and spice sensations extend. This is followed by a 12-month refinement in the bottle during which the tannins soften, the spicier and more ethereal sensations that characterize it appear. The balsamic notes of eucalyptus, medicinal herbs blend with the more complex ones of lacquer and resin.

  • Tasting notes

    Colour: intense and brilliant ruby red with more mature garnet nuances.

    Bouquet: intense and enveloping with evident notes of cherries in alcohol and wild rose, plum jam and berries including ripe blackberry. This is followed by persuasive hints of licorice and bitter chocolate, resin and rhubarb; In the most refined wines, those typical of goudron, tobacco and leather are clearly distinguished.

    Palate: Full, powerful and complex; notes of black berry fruit, balsams stand out, followed by a vein of licorice that blends well. With aging, the bouquet is enriched with the complex notes of quinine, fir resin and goudron.
