Elegance: pure Pinot Noir with zero dosage.

Fresh softness, a very fine perlage and a broad and persistent bouquet.

  • Grape variety

    Pinot Noir grown in Guyot with sustainable viticulture.

  • Winemaking

    Soft pressing of the whole grapes and flotation for the natural clarification of the must in an inert environment (nitrogen).

    Start of the slow alcoholic fermentation that lasts about 1 month at 14°C and ends with the permanence on thin lees for 2 months during which the wine acquires richness and volume.


  • Tirage

    The secondary fermentation is carried out with a very slow re-fermentation in the bottle, characteristic of the Classic Method in the spring of the year following the harvest, usually during a waxing moon.

    During the maturation in the bottle for over 48 months, the lees are brought back into suspension at least twice with the traditional rapid shaking (Coupé de Poignet). At the end of this period, the bottles are placed upside down for final disgorging.

  • Disgorging and Zero Dosage

    The refined completeness that Pinot Noir can express after long ageing on the lees of the classic method reaches its peak when it is pure.

    To respect these prerogatives, we produce exclusively our Alta Langa from Pinot Noir grapes as a Zero Dosage Reserve.

  • Pairings

    Excellent as an aperitif at any time of the day; At the table he prefers above all fish, shellfish, shells and in general all seafood cuisine.

    Also very interesting next to appetizers, lean first courses and soups, white meats, short-ripening cheeses and pastries.

    Drink at 4–6 °C.  Ageing potential: 10–15 years.

  • Tasting notes

    Colour: Fine, creamy Perlage with a persistent foam that envelops a compact straw-yellow colour.

    Bouquet: Broad, deep and complex with hints of linden, honey, ripe white-fleshed fruit that evolve into fresh hay and citrus fruits. Pleasant notes of mineral, bread crust and in the end the nuance of sugared almonds.

    Palate: Fragrant, intense and elegant with citrus notes echoing the bouquet. Excellent freshness of the creamy structure and a long mineral aftertaste.
