Ad Majora Langhe
DOC Chardonnay
Elegant, savoury and floral
Chardonnay with a marked flavour combined with the elegance of the intense notes of flowers and white fruits. Behind an apparent immediacy, its pleasant soft but clearly evident structure stands out.
Grape variety
Chardonnay grown in Guyot with sustainable viticulture.
Harvest
The Ad Majora LANGHE doc CHARDONNAY is obtained exclusively from Chardonnay grapes harvested by hand in small and selected vineyards in the Langhe, usually in the first ten days of September.
Winemaking
Destemming and delicate crushing followed by skin contact maceration at 4° C for 12 hours. Separation of the skins in an environment protected by inert gas, flotation for natural clarification of the must and the onset of slow alcoholic fermentation lasting about 1 month at 14°C. This is followed by the ageing on thin lees for 2 months with weekly stirring during which the wine acquires richness and volume, concluding with cooling to -2, -4°C for tartaric stabilization with the sole use of cold and final racking for ageing in barrel until April.
Bottling and ageing for about 6-8 months before release on the market.
Serving suggestion
Temperature: 10-12°C. To drink in 5 years.
Pairings
Well structured, excellent as an aperitif or with both hot and cold appetizers, savoury pies, delicate first courses or with shellfish - fish and white meats.
