DOC Cabernet Sauvignon

Fruit, complexity and persuasiveness

A variety widespread on all continents, it manages to express a unique product in the extraordinary soils of the Langhe. The different peculiarities conferred by each vineyard give a gustatory richness capable of blending the elegance and typicality of the territory that produced it with the immediacy and generosity of Cabernet Sauvignon.

  • Grape variety

    Cabernet Sauvignon in purity.

  • Harvest

    Given the good vegetative energy that characterizes this variety, the laborious leaf removal and thinning operations carried out during the summer months are decisive. The harvest, which takes place in the first days of October with manual selection, is usually delayed in order to fully ripen the fruit with a significant reduction in herbaceous notes.

  • Winemaking

    Delicate destemming with light crushing and cold static maceration for 1 day.

    Alcoholic fermentation at 24° C for 20 days with frequent punching down carried out with extreme care to promote the production of the rich aromatic set and a good extraction of anthocyanins, authors of the intense color of this wine.

  • Ageing

    In second and third passage oak barrels for a period of 18-24 months, completed by the maturation in the bottle of over six months during which the floral and fruity notes grow and expand, the more complex ones of spices, lacquer and chocolate appear, blending with the rich aromatic component that characterizes it.

  • Pairings

    Excellent as an aperitif or in combination with appetizers, first courses and cakes but above all next to red meats of different origins, Lamb, Pork or Beef especially with grilled cooking. Always suitable with medium to long-aged cheeses. Serve at 16-18°C, over 10-15 years.

    Exposure: East – South-East

    Average altitude: from 260 to 430 m above sea level

    Year of planting: 1965-2015

    Soil: laminated and sandy Sant'Agata marls interspersed with layers of sandstone and conglomerates.

  • Tasting notes

    Colour: intense ruby red.

    Bouquet: in young wines it stands out for the pleasantness of the intense fruity and floral notes with a hint of medicinal herbs; in the more evolved ones, the scents range from warm tones of jam and caramel to the more austere ones of goudron and light toasting with spicy and balsamic nuances are suggestive. There is always a slight typical herbaceous note that distinguishes it and of undergrowth.

    Palate: full, enveloping and harmonious with intense references to red fruit jam and spices that are represented. The structure impresses with the softness of the barely perceptible tannins and the volume on the palate. On the finish, evident hints of licorice and goudron tempered by the sensation of bitter chocolate powder and undergrowth.
